Rice with Carmelized Shallots imported from Recipe Import

Ingredients

1 T
butter
1  
shallot
1 c
white rice
1⁄4 c
white wine
1 c
chicken broth
1 c
water

Instructions

In a medium saucepan over medium heat melt the butter.
Add the shallots and saute until very soft, about 5 minutes.

Stir in the rice and add a pinch of salt.
Raise the heat to high and stir the rice to toast, about 1 minute.

Add the wine and cook until reduced by half.
Pour in the stock and water and bring to a boil.
Lower the heat, cover, and simmer until liquid is absorbed, about 20 minutes.
Season with salt to taste.

Notes

Great side for fish.
