Ingredients

egg white
1⁄2 c
Panko breadcrumbs

cod fillets
1⁄2 t
Kosher salt
2 T
canola oil
1 c
grape tomatoes
1⁄2 c
sweet onion
2 T
basil leaves
2 T
lemon juice
1⁄2 t
black pepper

Instructions

1. Preheat oven to 450

2. Place egg whites in shallow dish and panko in another shallow dish. Sprinkle fish with 1/4 teaspoon salt. Dip fish in egg whites then dredge in panko.

3. Heat oil in ovenproof skillet over medium-high heat. Swirl to coat. Add fish to pan and cook for 3 minutes or until brown and very crispy. Turn fish over. Place pan in oven for 7 minutes.

4. Combine remaining 1/4 teaspoon salt, tomatoes, onion, basil, lemon juice, and pepper in a bowl. Serve with fish.
