Ingredients

zucchini
1⁄2
squash
1⁄2
red bell pepper
1⁄2
yellow bell pepper
1 lb
asparagus
1⁄2
red onion
1 1⁄2 T
olive oil
1⁄2 t
salt
1⁄4 t
black pepper

Instructions

Preheat oven to 450 degrees

Cut all vegetables into bite size pieces and place in roasting pan

Toss with olive oil, salt, and pepper to mix and coat

Roast for 30 minutes, stirring occassionally until vegetables are tender and lightly browned
