Eggplant Spaghetti with Fresh Mozarella imported from Recipe Import

Ingredients

onion

olive oil

zucchini

balsamic vinegar
3⁄4 t
salt
1⁄4 t
pepper
1⁄2 lb
spaghetti
9 oz
fresh Mozarella cheese
3 T
basil

Instructions

Cook and stir eggplant, onion, and garlic in hot oil in large skillet on medium heat 10 minutes. Add zucchini halfway though cook time.

Stir in tomatoes, vinegar, salt, and pepper; continue cooking 10 minutes or until vegetables are tender and sauce is thickened, stirring occasionally.

Serve over spaghetti noodles and top with fresh chopped basil and fresh mozzarella cheese.
