Ingredients

1⁄4 c
butter
2 T
olive oil
2  
apple
1  
onion
1⁄2 lb
sausage
6  
cornbread muffins
1  
egg
1⁄2 c
heavy whipping cream
1⁄2 c
chicken stock

Instructions

Peel and dice apples into small cubes. Dice the onion.

Melt butter over medium heat. Toss apples for 2 minutes then set aside.

Add olive oil to the pan. Cook sausage until light brown. Add diced onion to sausage and cook for 10 minutes.

In a large mixing bowl combine apples, crumbled cornbread, and salt and pepper to taste.
Whisk egg, cream, and chicken stock together. Pour over the apples and cornbread.
Add the sausage and onions. Mix well. Pour into a greased 13 x 9 pan.

Bake at 375 for 30-40 minutes.
