Ingredients

olive oil
1 c
onion
1 c
carrots
1 c
parsnips
1 T
flour
4 c
chicken broth
1⁄4 t
salt
1⁄4 t
black pepper
1 1⁄2 c
chicken breast
1 c
noodles
1⁄4 c
parsley

Instructions

Heat oil in a large Dutch oven over medium high heat.

Add onion, carrot, and parsnip; saute for 3 minutes.

Stir in flour. Gradually add broth, salt, and pepper while stirring with a whisk. Bring to a boil. Cover, reduce heat and simmer for 20 minutes.

Add chicken and noodles. Bring to a boil and cook 8-10 minutes or until chicken is cooked and noodles are tender.

Stir in parsley.
