Ingredients

frozen chopped onion
1⁄4 c
diced green chiles
1⁄4 c
chopped pimentos
2 T
butter
2 pk
yellow saffron rice
3 1⁄3 c
chicken broth
1 cn
black beans

Instructions

Drain and rinse the black beans. Combine all ingredients in a large saucepan. Bring to a boil over medium-high heat. Reduce heat to a simmer. Cover and cook for 20-25 minutes or until all liquid is absorbed. Fluff with a fork and serve.
